Journeyman’s Food & Drink in Fullerton Presents Elevated Postmodern Fare

Chef Zachary Geerson unveils Journeyman’s Food & Drink, a prix fixe destination presenting elevated postmodern fare in a beautiful new space adjacent to the Hotel Fullerton. Geerson, 27, was trained at the Culinary Institute of America, served as executive chef at Tempo Urban Kitchen in Brea, and also oversees the hotel’s Citizen Kitchen. His background is Sicilian, his wife is Thai and Laotian, and he uses all of these cultures as touchstones for thoughtful dishes that are meticulously executed. Diners choose one of four options from each of the four courses. Typical dishes include herb-marinated fava beans with goat cheese, dill, and fennel flowers or an amuse-bouche consisting of a foie-gras marshmallow with finger lime that’s served between the thumb and index finger of a hand sculpture. Cocktails and wine pairings are thoughtful, too. Prix fixe dinner, $75; wine pairings, add $50.
